For a good month of the summer we were up to our ears in peaches, picking them every other day, making peach jam, peach cobbler, peach pie, peach salsa, eating them fresh with our breakfast, until one day Dan said "I don't want any more peach pie." I guess you can have too much of a good thing! So, we froze a bunch of them, and maybe later this year he'll feel like having a homemade peach pie again. :)
First, find yourself a peach tree
Then ask your husband to please pick some peaches for you. This usually works better if he has not just picked peaches the day before.
Rinse the fruit. It was just outside among the bugs and dirt a few minutes ago!
Blanch your peaches. That means put them in boiling hot water for a few seconds, then cold water so their skin comes off easily.

Pit and chop your fruit. The recipe in the
pectin box calls for 4 1/2 cups of peaches
Bring the peaches, sugar and pectin to a boil, stirring constantly.
Quickly and carefully (seriously, this stuff is boiling hot!) ladle the fruit concoction into the prepared jars, then tightly screw on the lids. Flip the jars over for five minutes.
Flip back and wait to hear the "pop" that means the lids have sealed. Enjoy your delicious homemade peach jam!

i just realized, with all the peach pie i ate, i never had any jam! oh, and i think that the raspberries should be a standard addition... that was yummy! yes, if everything is still good in wintertime it will be nice to have a homemade piece of peach pie.
i knew something was missing in this whole process! you didn't do the hot-water bath after sealing!!! good lord, you'll kill us all. kidding, but not...
